Kassandra et al make a persuasive case, but from a single perspective, and are unrealistic in their expectations of both clinicians and patients’ behaviour.
In reduction of carbon footprint, consumers might first consider:
1. The avoidance of waste. Estimates vary, but up to a third of food produced for the UK is estimated to go to waste: households which manage food well need waste very little of their purchases.
2. Sourcing food produced close to home, avoiding the carbon footprint of inter-continental transport.Kassandra et al.'s dietary recommendations include vitamin supplements, unnecessary with a traditional balanced diet, sourced closer to home, albeit with a reduction of well-known harmful ingredients.
